Diego Cardoso was born in Argentina and his earliest culinary influences came from his mother and Italian grandfather, when they would spend hours in the kitchen, and barbecue together in the back garden – both great introductions to cooking for any budding young chef. The Italian influence of his grandfather encouraged his journey as a chef and he started as a Chef de Partie at the Italian restaurant at the 5* Palacio Duhau, Park Hyatt Hotel in Buenos Aires.
Graduating in 2001, Diego moved to the UK The Connaught as a Commis Chef and when Angela Hartnett took on the kitchens there, Diego became an integral part of her team, which went on to win a Michelin star. During the 5 years he was there, he swiftly worked his way up the ranks to become Angela's right-hand man and Senior Sous Chef. In 2007, at Angela's request, Diego travelled to Florida to set up her second restaurant, Cielo at the Boca Raton Resort and Club, then on to Dubai to work with the team at Verre by Gordon Ramsay. Then, suitcases packed again, Diego set off for Versailles to assist with the opening of Gordon Ramsay au Trianon.
In 2008, he settled for good in London to finally take the helm at Murano. They had won a Michelin star within 5 months of opening, and he remained Head Chef there for 6 years. The Italian influence that was firmly established from his early days cooking with his family had evolved towards him leading a Michelin star Italian kitchen.
In October 2017, he was appointed Chef Director at Harry’s Dolce Vita in Knightsbridge. What makes Diego tick is the people he works with. For him, it’s all about the team. There’s nothing he loves more than bringing on young chefs, and watching them work as a team and grow into the Head Chefs of the future.
In between services and when he had a spare moment during his career, Diego managed a little television, working on the F-word and Hell's Kitchen. He has also worked with Angela Hartnett on three cookery books.
